Nisin

Nisin is a pale brown solid powder. When used, it should be dissolved in water or liquid, and it has different solubilities in different pH value. For example, in water (PH = 7), the solubility is 49.0mg/ml (Nisin); in 0.02M Hydrochloric acid, the solubility is 118.0mg/ml (Nisin); and, it almost does not dissolve under alkaline conditions.

Nisin can be digested to amino acids by protease in digestive tract and there is no residue, no effect to human probiotics, no resistance and no cross-resistance with other antibiotics. It is a natural food preservative with efficient, non-toxic, safe and no side effects. Many countries, such as Britain, France, Australia, add Nisin into packaging foods. Following this method, we can reduce the sterilization temperature, shorten sterilization time, lower the temperature of thermal processing, reduce nutrients losses, improve food quality and save energy, and it also can effectively extend the food preservation time.
