Although many achievements have been made for the production of gellan gum, there still exist some problems, such as low output, high energy used for air agitation, high consumption of organic solvents used in purification and difficulty in recovery of organic solvents. Consequently, the orientation for the production and research of gellan gum in the future is to increase production and reduce cost.
