xanthan gum production

Xanthan gum is anionic polysaccharide polymer with high molecular weight generated by starch after fermentation of Xanthomonas Campestris. It is a white powder, with soluble in cold water and hot water, while insoluble in common organic solvents. For the unique molecular structure, xanthan gum plays a significant role in the food, personal care products and many other industrial fields.
The properties are as follows:

** A high viscosity at low concentrations
** Height pseudoplastic that leads to the reversible viscosity decrease and restoration
** Efficient and persistent suspension
** Keep the solution stable in broad pH value range
** Good compatibility with guar gum and locust bean gum
** Thermal stability
** Good compatibility with other thickeners or stabilizers in the complex solution
** Remain stable in the high salt solution
** Remain stable when freezing and thawing
